Knife Angle and Board Wear
How your cutting board treats a knife edge comes down to grain direction, hardness and how you actually cut. Working notes on which boards dull knives fastest and why.

Your board dulls your knife more than your food does.
Vegetables and meat are soft. The hard, unforgiving thing your edge meets a few thousand times a day is the surface underneath them. Which surface that is, and how you land on it, does more for edge retention than almost anything else in the kitchen.
What Dulls an Edge
A knife edge is a thin wedge of steel, a few microns across at the tip. Three things blunt it.
Impact. The edge hits something harder than itself and rolls or chips. Glass, stone, ceramic and steel all do this immediately. This is the fast, obvious kind of damage.
Abrasion. The edge scrapes across a surface and material wears away. Slower, quieter, and it's what happens on every board on every cut.
Rolling. The very tip bends sideways without breaking off. The knife feels dull but the steel is still there — this is what honing straightens back.
A good board minimizes the first, reduces the second, and lets you fix the third with a honing rod. A bad board does the opposite.
Grain Direction Is the Real Variable
This matters more than species, and it's the thing most people get backwards.
Edge grain presents the long sides of the wood fibers. Cut into it and the edge scrapes across the fibers, like running your hand along the outside of a bundle of straws. The fibers resist, and the surface shows the mark.
End grain presents the fiber ends — the open tubes. The edge slips between them rather than across them, and the fibers spring back afterward. This is the "self-healing" property people talk about, and it isn't marketing. It's just what happens when you cut into the end of a bundle of straws instead of along the side.
The practical result: an end-grain board of a hard species is often gentler on an edge than an edge-grain board of a softer one. If you're choosing between an end-grain maple board and an edge-grain walnut board, the maple usually wins on knife wear despite being the harder wood.
Hardness Still Matters, Within Reason
Janka hardness for the three woods people actually choose between:

Softer wood is easier on steel. It's also easier to gouge, and deep gouges are where moisture and bacteria settle in.
There's a floor and a ceiling. Below roughly 900 Janka the board damages too easily to stay clean. Above about 1,500 — bamboo sits around 1,400 to 1,600 depending on how it's made, and it contains silica besides — you're into territory where the board starts winning the argument with your knife.
Hard maple at 1,450 sits near the top of the usable range, which is why it's the standard for butcher blocks. In end grain, that hardness costs you very little in edge wear.
Surfaces to Keep Knives Away From
- Glass and marble. They will chip an edge on the first cut. A glass board is a serving tray that's been given the wrong job.
- Stoneware and ceramic. Same problem, slightly slower.
- Steel sheet pans. Fine for carving in an emergency, bad as a habit.
- Bamboo. Popular and inexpensive, but it's a grass, it's usually strip-laminated with a lot of glue, and the natural silica content is abrasive. It'll dull a knife noticeably faster than maple.
- Heavily scored plastic. A new plastic board is easy on an edge. An old one full of grooves is abrasive and hard to clean.
Technique Changes Wear as Much as Material
The board is half of it. How you land on it is the other half.
Rock, don't chop. A rocking cut with a curved blade rolls the edge through the food and onto the board at a shallow angle. A vertical chop lands the whole edge at once, at full force. Rocking spreads the impact along the blade rather than concentrating it.
Stop scraping with the edge. Sweeping chopped onion off the board with the sharp side is the single most common way home cooks blunt a knife, and it undoes a sharpening session in about four seconds. Flip the knife and use the spine.
Let the weight work. Pressing hard doesn't cut faster, it just drives the edge into the board harder at the end of every stroke. A sharp knife wants guidance, not force.
Keep the board still. A sliding board makes you compensate with grip and pressure, and both are bad for the edge. Damp towel underneath, or a board heavy enough to stay put on its own.
Honing Is Not Sharpening
Worth separating, because board wear shows up as both.
Honing straightens an edge that has rolled. A honing rod, a few passes per side, ten seconds. Do it often — before or after each session is not too much.
Sharpening removes steel to create a new edge. A stone or a guided system, and it takes real time. Do it when honing stops bringing the knife back.
A good end-grain board mostly causes rolling rather than abrasion, which means honing keeps working for longer and you sharpen less often. That's the practical benefit of the whole grain-direction argument, stated plainly.
The Bottom Line
For knife life, in order: end grain over edge grain, a hardwood in the 1,000 to 1,500 Janka range, and nothing made of glass, stone or bamboo. Then stop scraping with your edge, because the best board in the world won't save you from that.
